spicy tofu miso sandwiches

i have an insatiable fascination with food. every once in a while, my rudimentary culinary skills result in healthy, savory recipes i'm relatively pleased with. here's one:

spicy tofu miso sandwiches
16 oz firm tofu, drained
miso marinade (recipe below)
1 c fresh spinach, washed and dried
1/2 onion, diced
2 ciabatta rolls
salt & pepper to taste
1 tsp hot sauce (i like blair's after death sauce!)

miso marinade
1/4 c miso
5 Tbs water (enough to dilute miso--think bbq sauce consistency)
2-3 cloves garlic, grated
1 tbs sesame oil
1/2 tsp ground black pepper
1/2 tsp paprika

slice tofu in half, then into 1/2'' pieces. combine marinade ingredients, add tofu. allow to marinate 30-45 minutes.

sweat onions, season with salt and pepper to taste. add hot sauce, mix until well incorporated. add spinach, saute until slightly wilted.

add miso tofu.

reduce until sauce has thickened.

slice ciabatta in halves.

top with spicy miso tofu and spinach mixture and nom nom nom.

this was my first try at mimicking my faaavorite sandwich at peace cafe. feel free to use it as jumping-off point for your own experiments!
